Introduction

The water immersion retort injects steam directly into the upper tank to heat the process water to the preset temperature. The heated water is then transferred to the lower retort vessel, providing a high initial process‑water temperature and rapid heat penetration. During sterilization, the process water is continuously circulated through a water‑steam mixing system to maintain uniform temperature distribution.

The upgraded design features a powered water‑circulation system for faster flow and more uniform water distribution. A top‑mounted water‑distribution box further improves heat distribution throughout the retort, helping ensure consistent sterilization performance.

The optimized piping layout and high‑flow, low‑head circulation pump reduce piping length and bends, helping lower water consumption and heat loss.

Excessive temperature and prolonged processing can adversely affect flavor and nutrients. Rapid heating and cooling shorten thermal exposure and help preserve the original flavor, texture, and nutritional quality of the product.
